Wine Titration: Measuring Acidity Beyond pH

As we continue climbing the Homebrew Skills Tree, we’re beginning to use more sophisticated tools to understand what’s happening inside our fermenter.  So far, we’ve learned to measure gravity, temperature, oxygen, and fermentation progress.  Now we introduce a laboratory technique that many winemakers use to produce more balanced, stable wines: titration.  If you’ve never made wine before, this may sound like chemistry class.  In a way, it is.  But titration is simply another measurement tool that helps answer an important question: How much acid is actually in my wine?

Isn’t That What a pH Meter Does?

Not quite.  A pH meter measures how strong the acid is at a given moment.  A titration measures how much acid is present.  Those are different things.  Think about lemonade.  One glass might taste very sour because it contains a small amount of very strong acid.  Another might contain much more acid overall, but because of buffering and other compounds, its pH may not be dramatically different.  Both measurements tell us something useful—but they answer different questions.

pH vs. Titratable Acidity

Winemakers often measure two related values:

pH

in winemaking, pH tells us microbial stability, color stability, sulfite effectiveness, and how “active” the acids are.

We measure pH with a pH meter.

Titratable Acidity (TA)

TA measures the total amount of acid in the wine.  This has a major influence on perceived tartness, freshness, balance, and mouthfeel.

Both numbers are important because wines with identical pH values can have very different total acidity.

Why Does Acidity Matter?

Acid is one of the structural components of wine.  Too little acid and a wine may seem flat, dull, and/or lifeless.  Too much acid and it may taste sharp, sour, or harsh.  The goal is balance.  Just as brewers adjust bitterness to balance malt sweetness, winemakers balance acidity against fruit, alcohol, tannins, and sweetness.

How Does Titration Work?

Fortunately, the chemistry is much simpler than it first appears.  A measured amount of wine is placed into a small container.  A solution of known concentration (usually sodium hydroxide (NaOH)) is added slowly while mixing.  The sodium hydroxide neutralizes the acids in the wine.  Eventually the sample reaches a specific endpoint where all measurable acids have been neutralized.  The amount of sodium hydroxide required tells us the total acidity.

Modern home wine kits often use a syringe, a small beaker, standardized sodium hydroxide, and an indicator dye that changes color.  Some advanced winemakers use electronic pH meters to determine the endpoint instead of relying on color.

What Does the Number Mean?

Titratable acidity is usually reported as grams per liter (g/L) as tartaric acid.  Typical finished white wines often fall roughly between 6-8g/L, red wines are in the range of 5-7g/L.  These are not strict rules.  Different grape varieties and wine styles naturally have different acidity.  The goal is producing a wine that tastes balanced.

What If My TA Is Too High?

As mentioned above, high acidity may produce a wine that tastes overly tart, sharp, or thin.  Possible adjustments for high titratable acidity include:

  • blending
  • malolactic fermentation
  • controlled deacidification
  • allowing additional aging

These decisions depend on both measurements and taste.

What If My TA Is Too Low?

Also as mentioned above, low acidity may make a wine seem soft, dull, or lacking freshness.  Winemakers often correct this by adding:

  • tartaric acid
  • sometimes malic acid
  • occasionally citric acid

The choice depends on the wine style and desired flavor.

Why Taste Still Matters

One of the interesting things about winemaking is that instruments don’t replace your palate.  A titration gives you an objective measurement, but your palate will let you know whether the wine feels balanced.  The best winemakers use both.  Measurements provide consistency.  Tasting provides supports the artistry.

Does This Matter Outside of Wine?

Absolutely.  While titratable acidity is discussed most often in winemaking, the same principles apply elsewhere.  Meadmakers often adjust acid balance after fermentation.  Cider makers balance sweetness against acidity.  Even kombucha brewers monitor acid development (there are only a couple of days between sweet and tart), although they usually rely on pH meters rather than full titrations.  Understanding acid helps every fermenter produce more balanced beverages.
