Description
Black tea is the traditional tea for kombucha brewing. Assam black tea comes from the Assam region of India, which, being at sea level with high temperatures and humidity, produces a tea with distinct malty flavor.
Assam black tea comes from the plant Camellia sinenses just like green, white, & oolong teas. What differentiates these teas is the level of oxidation, black being the most highly oxidized or “fermented.”
Given Assam black tea’s flavor and caffeine content, it is an ideal partner for your Kombucha fermentation.
- To enjoy as a cup of tea: steep 1 tsp of tea in boiling hot water for 3-5 minutes. Add milk and sugar if desired.
- To brew for kombucha: Use 2 TBSP tea per gallon of kombucha, Steep for a minimum of 10 minutes in about 2 cups of hot water. Then, dilute with cool water until it reaches room temperature before pitching your culture.
